What Makes Yirgacheffe Green Coffee Different?
Yirgacheffe produces coffee at 1,700–2,200 metres above sea level in the Gedeo Zone of southern Ethiopia. The combination of altitude, rich volcanic soils, and a distinct microclimate produces the region's signature cup: intense florals, bright citrus acidity, and a clean, tea-like body in washed lots.
These characteristics make Yirgacheffe one of the most recognisable single origins for specialty roasters. Both washed and natural processing are available from the current harvest.
Cup Profile by Processing Method
Washed
Jasmine, bergamot, honeysuckle, lemon verbena, clean bright finish. Fermentation and washing remove cherry pulp before drying, producing the clarity and floral complexity Yirgacheffe is known for.
Natural
Cherries dried whole on raised beds for 15–25 days. Fruitier, fuller-bodied cup: blueberry, peach, dried citrus, sweet finish. Popular for premium espresso and single-origin filter programs.
